Weekly Meal Plan

I love sitting down on Sunday afternoon and looking through cookbooks or browsing online for new recipes to try in the coming week.
Here's what I'm planning. What are you having? I haven't figured out Friday and Sunday yet and would love some suggestions!

Sunday (tonight) : Patty Melts! A very atypical Easter meal but one of my absolute favorites. You can find the recipe in a previous blog post from 2/26/11. Tonight I'm serving it with butternut squash 'fries'.

Monday: Vietnamese Grilled Pork. We found some pork chops on sale at the market today. This is an quick cooking and light weekday dinner meal.

Tuesday: Veggie Quiche with sweet potato crust. I make this one ahead of time and store in the fridge. Andrew and I need something we can both heat and eat on our own Tuesday nights and this protein filled comfort food fits the bill.

Wednesday: Spicy Shrimp Marinara with Feta. Tonight I'll eat a small serving before heading out on my mountain bike for a team training ride. This meal reheats nicely so I can grub down some more when I get back.

Thursday: Chicken fajitas! A household specialty and all-time favorite. (We made campfire fajitas the night we got engaged:)

Friday: ????

Saturday: Pre-Race PIZZA! Yippee. Tonight we dine out! To fuel up for a long haul cross country mountain bike race tomorrow we'll enjoy a few slices of cornmeal crust pizza or a plate of whole wheat pasta (and dessert).

Sunday: ????

What can I do (eat)?

Amazingly, in a household of chocolate lovers there isn't a single bunny, egg or any other Spring object made out of the stuff in here. Andrew and I are spending this Easter Sunday cleaning house and milling about the yard. I've also got a typical pre-Monday to-do list that I'm slowly working through. However, like many other Sundays, I find myself standing in the kitchen more often than planned. I'm a little bored. I'm slightly chilled. I am avoiding scrubbing the bathtub. I haven't thought of the perfect blog post. So I start thinking...."What else can I do?" Or rather, "What else can I eat?"

I know for a fact this isn't a personal problem. Mindless munching and grazing between meal times is a common occurrence for anyone who's human! Hey even our pets do it!

So what do you do to lure yourself out of the kitchen and back into the moment?

I launched a three pronged attack(the enemy was fierce today). I brushed my teeth, popped a piece of gum in my mouth and sat down to write. So, maybe it isn't the perfect blog post. In fact, I'm not sure there even was one. And maybe your nutrition wasn't 'perfect' today either. But if you take a second to stop and come back to the present moment you might find something that is.

Dreams do come true. Choppino.

If I ever see anything like 'fish stew' or Choppino on a menu there's little question what I'm having, unless it's 9am. Even then. I don't think there's anything as delicious as a piping hot bowl of stewed, spicy tomatoes surrounded by chunks of tender seafood. I always feel sufficiently fed, warm and healthy when I swipe the last bits out of the bowl with a bit of crusty bread. Heaven. With a name like Choppino I didn't think my kitchen could handle the traditional stew.

According to wikipedia..."Cioppino is a fish stew originating in San Francisco and derived from the various regional fish soups and stews of Italian cuisine. Cioppino is traditionally made from the catch of the day, which in the dish's place of origin is typically a combination of dungeness crab, clams, shrimp, scallops, squid, mussels and fish. The seafood is then combined with fresh tomatoes in a wine sauce, and served with toasted bread, either sourdough or baguette. The name comes from ciuppin, a word in the Ligurian dialect of the port city of Genoa, meaning "to chop" or "chopped" which described the process of making the stew by chopping up various leftovers of the day's catch. At least one restaurant in San Francisco, the eponymous Cioppino's, describes an apocryphal story in which the name derived from the heavily Italian-accented cry of the wharf cooks for the fishermen to "chip in" some of their catch to the collective soup pot."

That makes sense to me and the crazy, toss this in, try this spice way I finally made me own version tonight! I started with chopped garlic and shallots and a little olive oil in the bottom of a tall copper pot. I added chickeb broth and more chopped onions. When the onions turned translucent I added a canned of diced tomatoes with green chilies (I like it SPICY).

My spice drawer is unsightly and a bit like a stew itself...a little bit of everything spilled out of plastic bags, glass and plastic containers, some labeled and some identified by smell.

I tossed it a good amount of cumin, red pepper flakes, some 'italian blend', fennel seeds (for fun), garlic powder and good old salt and pepper. Standing in the kitchen with the refrigerator door open I figured a little worchester, white cooking wine and some red form my own glass would be just the thing!

Andrew and I stopped by Trader Joes after our gym date where I picked up a bag of frozen salmon and their frozen seafood medley complete with shrimp, calamari, scallops and cod. After simmering the spicy tomatoes for about an hour on low I tossed in the defrosted and chopped up fish just before Blazers half time. I threw together a small salad, popped some bread in the toaster and served my first Choppino to one hungry, handsome dude flanked by desperately meowing kitties. (Sorry Sherman and April, this stew isn't for you!)

Amazing. I've got enough for tomorrow -- but not enough to share:)
