• 4 x 5-oz halibut fillets - we used true cod but any nice white fish will do!
• 1/4 cup pesto sauce
• 1 cup carrots, shredded (2 medium)
• 1 cup zucchini, shredded (1 small)
• 1 cup cabbage, shredded
• 4 cloves garlic, minced
• 1 tsp sea salt
• 1 tsp freshly ground pepper
• 4 tsp best-quality olive oil
• 4 tsp low-sodium chicken stock
Preparation
Preheat oven to 450°F
Place each fish fillet in the middle of a large piece of parchment.
Spread 1 Tbsp pesto over fillet and top with 1/2 cup carrots, cabbage and zucchini.
Spread 1 minced clove of garlic over fillet and sprinkle with 1/4 tsp salt and black pepper. Then drizzle fillet with 1 tsp oil and 1 tsp chicken stock.
Fold parchment paper over the fish and seal edges with narrow fold. Mine didn't come so pretty sounding - I just wrapped the fish like an ugly Christmas gift.
Repeat with remaining parchment paper, fish and vegetables.
Place packets on baking sheets. Bake for 15 minutes or until puffy and lightly browned.
To serve, transfer packets to plate and open.
This was really delicious.
Good Food = Better Life.

What did you eat today? How did it make you feel? We often eat certain foods out of habit. Some foods energize and sustain us. Some foods make us tired and cranky. We may blame the weather or work or something else for our bad feelings but it might be our diet. Take some time after each meal or snack this week to sense how it makes you feel. Make changes as needed! You can feel great!4:12 PM Remy Maguire - Manifest the Best 0 Comments
