Healthy Holiday Cookie- Take 2!

Ok, so that last batch of cookies weren't fit for Santa or his reindeer. But I am determined to find a great healthy holiday recipe that I'll feel proud of wrapping up for friends. This year I've decided not to go crazy running all over town trying to find gifts that aren't quite right when I know that everyone loves cookies! Right? They just have to be tasty!

How do these sound? The bittersweet chocolate cools out the heat of the ground peppers. Just like a yummy cup of Mexican cocoa! At only 80 calories a cookies and 2 grams of fat these are sweet and light.

Mexican Chocolate Cookies

5 ounces bittersweet(60% cacao)chocolate, coarsly chopped
3.4 ounces (about 3/4 cup) all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon baking power
1/4 teaspoon salt
Dash of black pepper
Dash of ground red pepper
1 1/4 cups sugar (Use Splenda or an organic sugar substitute if you need sugar-free)
1/4 cup butter, softened (I never use as mush as called for)
1 large egg
1 teaspoon vanilla extract

1. Preheat oven to 350 degrees
2. Place chocolate in a small glass bowl; microwave on High for 1 minute or until almost melted, stir until smooth. I don't have a microwave or a double boiler so I'll use a sauce pan and melt on the stove top over low/med heat.
3. Weigh or lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 5 ingredients (through ground red pepper); stir well with a whisk.
4. Combine sugar and butter in a large bowl; beat with a mixer at medium speed until well blended. Add egg; beat well. Add cooled chocolate and vanilla; beat just until blended. Add flour mixture; beat until blended. Drop dough by level tablespoons 2 inches apart on baking sheets lined with parchment paper.
5 Bake at 350 degrees for 10 minutes or until almost set. Remove from oven. Cool on pans 2 minutes or until set. Remove from pans; cool completly on wire rack.

Makes 32 cookies.

Don't have a blender or a beater like me - well just use those super strong arms you got at the gym and call it an extra workout:)
